Shrove Tuesday is one of my most favourite days in the year. My mother was always amazing at arranging a fantastic family pancake feast every year. A reliable Delia Smith recipe, taking it in turns to cook and flip the pancakes and a huge assortment of different toppings led to one of our favourite family days in the calendar. Another annual tradition as common as lemon and sugar was my brother having a chocolate and cheese pancake and insisting it was the most delicious thing in the world – he still stands by this questionable combination to this day.
Shrove Tuesday was easy and simple. Until my other half decided to go vegan. Suddenly two staple ingredients of pancakes, milk and egg, are off the table leaving me with flour to play with. Back to the pancake drawing board…
Thankfully, after a little experimentation, I have developed pancake recipes that he absolutely loves and are a real crowd pleaser. Recently, I had my family up to stay and for Sunday brunch made a massive batch of these pancakes, they were all demolished and the family could not believe they were vegan and were asking for the recipe! These recipes are not a half-arsed replacement for pancakes, they are delicious in their own right, whether you are vegan or not vegan.
You don’t need any crazy ingredients or weird and wonderful egg replacers. Just simple store cupboard ingredients. Plain flour, soy milk, lemon juice, bicarb of soda and sugar. And these simple ingredients fluff up into beautiful pancakey goodness!
The first recipe is my fluffy pancake stack that I love to top with a blueberry coulis. This is a fantastic recipe and you could serve it with so many different toppings. A few of my favourite vegan pancake toppings are:
- Lemon juice and sugar
- Agave syrup
- Lime juice and desiccated coconut
- Fresh berries and soy yoghurt
- Melted chocolate and chopped roasted hazelnuts
- Smoked tofu and maple syrup
Recipe Two: Vegan Raspberry and Almond Pancakes
The second recipe puts a little spin on the first recipe. Think a beautiful combination of pancake and bakewell tart. The incorporation of the ground almonds into mixture and the raspberries on top makes for one delicious stack of pancakes. I am a huge fan of soy yoghurt and a good few dollops of vanilla yoghurt is highly recommended, I cannot get enough of the stuff, especially on pancakes!!
