Vegan Giant Couscous Salad

This is the perfect dish to bridge the gap between summer salads and winter stews. A warming couscous salad is perfect for lunch and dinner. Giant couscous is easy to cook and takes on flavour really well, it’s becoming a firm favourite in our house.

This is one of those dishes which I so versatile I think providing a recipe is counter-productive, instead pick your favourite veggies, balance the colours and include a source of protein. Experiment away and let me know if you come up with an awesome combination!

To make this salad, cook giant couscous according to the instructions and add in a variety of brightly coloured vegetables such as:

  • Finely chopped peppers
  • Aubergine chunks
  • Red onion
  • Chickpeas
  • Chopped cucumber
  • Spinach
  • Sun-dried tomatoes

Stir in tomato puree, vegan pesto, chopped fresh basil and black pepper to finish!

  1. Can I just say “finally”! A site geared toward vegan recipes and cooking that I can truly get on board with. My younger sister is a steadfast vegan, and it’s been an ongoing challenging finding recipes to cook for her that are vegan friendly, filling, AND delicious. This particular dish looks mouth wateringly good and wholesome. I’m forwarding it to my sis in the hopes that she’ll make it for herself…and me. πŸ™‚

    You have a wonderful site and I love that you are promoting something which you are obviously very passionate about! I may not be a vegan, but I will definitely be ‘following’, forwarding recipes to my vegan friends, and trying out some of your delectable dishes, myself.
