Vegan Coconut and Lime Oatmeal Cookies

Coconut milk is one of those ingredients that I have used more and more since cooking vegan. It is incredibly versatile and adds a creaminess to any dish. I recently made my sweet potato curry  and found myself with leftover coconut milk and fancied baking with it. We also had a couple of limes leftover from our margaritas and I thought why not combine the tropical coconut and lime flavours into oaty biscuits? And I’m glad I did they were delicious!

I love simple vegan baking. I find reading many vegan baking recipes they are full of difficult to source ingredients and try to be free from absolutely everything. I love to bake like I did when I was baking with butter and eggs. Simple ingredients, most of which you already have tucked away in your cupboards, and simple recipes that do not require hours of soaking, blitzing and pureeing. If you want raw, homemade nut butter based and avocado filled cookies this one is not for you. If you want tasty, moreish, slightly naughty cookies then this one is definitely for you!

Coconut and lime cookies

I can never resist a good drizzle on top of a cake or biscuits so I decided to make a little lime drizzle with fresh lime juice and icing sugar and the zesty lime juice with the sweetness works fantastically.

IMG_4155So there they are, my coconut and lime oatmeal biscuits, a little taste of sunshine to brighten up these blustery autumn days. They were demolished rather quickly in our house I’m going to have to whip up another batch again soon!

  • Servings: Makes 12 small cookies

Vegan Coconut and Lime Oatmeal Biscuits

Ingredients

  • 50g vegan margarine, melted
  • 30g dessicated coconut
  • 50g sugar
  • 100g oats
  • 100g plain flour
  • zest and juice of 1 lime
  • 150ml coconut milk
  • 4tbsp of icing sugar

Instructions

  1. Combine the margarine, coconut, sugar, oats, flour, lime juice, zest and coconut milk in a bowl. Reserve a little of the lime juice for the drizzle on top.
  2. Place onto well greased baking parchment and bake at 180°C for 15 minutes.
  3. Combine the icing sugar and a little lime juice to give a thick icing that drizzle smoothly over the cookies, and drizzle away!

Serve and enjoy!
