So naturally I had to post a recipe for my zingy and chunky tomato salsa to complete this divine trio. The recipe is so simple and the result is a million times fresher and tastier than shop bought salsa.
Chunky Tomato Salsa
- 4 salad tomatoes
- 1 handful of coriander, chopped
- juice of 1 lime
- 1 spring onion
- salt and pepper
- Deseed the tomatoes and then finely dice.
- Mix together the tomatoes, spring onion, coriander and lime juice.
- Season, serve and enjoy.
